Tasty @CafeOn: Vegan Tofu Salad
Are you missing you diet daily, while promising yourself to have healthy food? Here’s a vegan salad for you. Its both tasty and healthy. You can have it even when dieting or just like that. Salads are an unpopular option for foodies like me. This salad will definitely change the way you think salads are. Have a look at the detailed recipe given below:

Ingredients:

For Tofu:

• Tofu 450 grms (drained and pressed dry for an hour, cut into cubes)• 2 tbsp almond butter (or peanut butter)• 1 tbsp soy sauce • 1 tbsp maple syrup• ½ tsp paprika• Dash of cayenne• 2 tbsp hot water• 1-2 tsp sesame oil or olive oil

For Dressing:

• ¾ cup cashews ( soak in boiling water for 10 minutes)• 5 tbsp unsweetened almond milk• 2 tbsp soy sauce• 1 tbsp palm sugar • 1 tbsp maple syrup

For Salad:

• 1 bunch of baby kale • 1 sliced avocado • 2 boiled beets thinly sliced

For Garnish:

• 1 cup of micro greens

Method

For the Marinade:

• In a large bowl, take almond or peanut butter, 1 tbsp of soy sauce, 1 tbsp of maple syrup, paprika, and cayenne. Combine them together well.• Add 2 tbsp of hot water to dilute the marinade.• Add tofu to the marinade and combine all of it together.

Cooking the tofu:

• Heat a pan with a tsp or two, of olive oil or sesame oil. Add the tofu cubes, into the hot pan to get a nice sear on both sides. • Cook for 2 to 3 minutes on each side keeping the flame of the gas low medium.• Cook until crispy from both sides. Put it down from the heat and keep it aside.

Vegan Tofu Salad

For the Dressing:

• Into a blender jar add the soaked cashews, almond milk, 2 tsp of soy sauce, a tsp of maple syrup and palm sugar. Blend all of it together until fully pureed.

For the Salad:

• In a large bowl, take roughly chopped baby kale, add the sliced avocado, add the boiled and thinly sliced beets.• Pour the dressing onto it. Mix well.Assembling:

• In a serving plate, take the prepared salad add in the fried tofu.
